Microgreens supplier AeroFarms is rolling out two new varieties — Micro Arugula and Micro Broccoli — into major national retailers, the company announced August 26. The launch arrives three months after Palm Ventures acquired the Danville, Virginia-based vertical farming operation and installed Gustavo Burger as Chief Executive Officer.

The Product Specs

Micro Arugula is now available at Whole Foods Market stores nationwide in a two-ounce package at a suggested retail price of $4.99. The Micro Broccoli launches exclusively at Costco in a club-sized six-ounce package at $7.99, initially targeting Northeast and Texas locations. Both varieties are ready to eat without washing and carry the company's 18- to 21-day shelf life — roughly three times longer than soil-grown counterparts, which typically last seven days or less.

The Micro Broccoli's nutrient density numbers are the functional standout: AeroFarms' internal analysis pegs the variety at 34 times more vitamin A, 6 times more calcium, and 4 times more magnesium per serving compared to whole crown broccoli. That positions the SKU squarely in the nutrient-dense, better-for-you produce segment that has driven consistent velocity gains at natural and conventional retail alike. Across its full lineup, AeroFarms cites phytonutrient concentrations running 4 to 40 times higher than mature vegetable counterparts, depending on variety — a structure-function profile increasingly relevant as operators and retailers seek produce with a credible wellness narrative.

Food Safety as a Category Driver

Burger pointed to food safety as a core commercial differentiator, not just a compliance checkbox. AeroFarms' proprietary aeroponic system eliminates soil contact, open-field contamination vectors, and dependence on external irrigation, instead circulating purified water that undergoes continuous monitoring and testing. The company maintains strict environmental controls over temperature, lighting, and airflow with minimal human contact, and every harvest undergoes third-party certification audits. "Food safety is increasingly the deciding factor for shoppers, more so now than we've seen in over two decades of operations," Burger said.

That safety narrative carries weight in a post-leafy-greens-recall environment where fresh produce scrutiny has intensified at retail. Indoor vertical farming's controlled-environment advantage — no pesticides, no soil-borne pathogen exposure — maps directly onto the clean-label and traceability priorities that buyers at natural and club channels are pressing vendors to demonstrate. AeroFarms' Certified B Corporation status adds a third-party sustainability credential that resonates with ESG-aligned retail procurement teams.

Distribution Footprint

The two new SKUs expand an existing portfolio already distributed across roughly 2,000 retail locations, including Harris Teeter, Jewel-Osco, Wegmans, FreshDirect, and the two launch partners. The company's vertical farm operates on 230 times less land and 90% less water than conventional field farming, according to AeroFarms — metrics that support sustainability claims relevant to both retail buyers and foodservice operators exploring supply-chain resilience.

For operators tracking the broader functional produce segment, the AeroFarms expansion signals that premium microgreens are moving beyond specialty natural retail into mainstream club and national grocery formats. With consumer purchase frequency for indoor-grown produce rising per the company's own data — and a 2024 ScienceDirect review confirming growing market and consumer awareness of microgreens as a nutrient-dense food category — the vertical farming segment appears to be finding its retail footing after years of capitalization challenges across the industry.
