The Comeback Format
Lifeway Foods (Nasdaq: LWAY) is re-entering the foodservice soft-serve channel with a kefir-based product designed for commercial soft-serve machines, placing real fermented dairy in froyo shops at a moment when gut-health and protein-forward positioning are driving premium traffic. The company confirmed placements at Drugstore, Mikono, and Culture Club — destinations already active in New York, Chicago, and Los Angeles — with additional markets in expansion.
The product's functional differentiation starts at the ingredient level. Unlike conventional frozen yogurt bases reconstituted from powder, Lifeway's formulation uses actual liquid kefir, delivering what the company describes as 50 billion CFUs per serving alongside bioavailable protein and a naturally occurring low-lactose profile. Those three attributes map directly onto four of the most durable purchase drivers in the better-for-you segment: probiotics, protein, gut health, and digestive comfort — including a growing subset of consumers managing appetite on GLP-1 medications who need protein-dense, lower-calorie options.
Forty Years of Fermentation
Lifeway has longer institutional memory with frozen kefir than any U.S. operator. In 2008, the company opened Starfruit Café in Chicago — later rebranded as The Lifeway Kefir Shop — running four brick-and-mortar locations plus a mobile food truck for 13 years before pandemic-era conditions forced closure in 2021. The brand simultaneously distributed frozen kefir in pint formats through retail, establishing consumer familiarity with the taste profile: creamy, tart, and tangy. That heritage gives the foodservice re-entry a credibility story most white-label soft-serve ingredient suppliers cannot match.
"Lifeway was the first to make frozen kefir, and we've continued to build on that experience from our Chicago shops to pints sold at retailers nationwide," said Julie Smolyansky, President and CEO of Lifeway Foods. "It's a delicious, guilt-free, gut-healthy and lactose intolerance-friendly option for consumers, including those looking for protein-forward foods while using GLP-1 medications."
Operator Opportunity
For foodservice operators, the pitch sits at the intersection of two category tailwinds. The global probiotic market continues to expand at a mid-single-digit CAGR, and the frozen novelty and soft-serve segment is increasingly bifurcating between commodity price-plays and premium, functional positionings. A soft serve that carries a legitimate structure-function story — live cultures, bioavailable protein, lactose-friendly — gives froyo operators a premium SKU without a radical equipment change, since the product is engineered for standard commercial soft-serve machines.
Lifeway is actively recruiting foodservice partners and frozen yogurt concepts interested in adding the kefir soft serve to their menus. The move extends the brand's existing probiotic and fermented-foods portfolio into a high-visibility, high-margin channel, complementing its retail drinkable kefir line and newer entries such as Muscle Mates protein kefir. Operators seeking differentiation in the better-for-you frozen dessert space now have a turnkey, ingredient-branded option with 40 years of consumer equity behind it.
