"You must be able to eat and then jump in a swimsuit, hit the pools and feel comfortable and energized to do so," Steffen said.

Whole, unprocessed ingredients deliver greater bioavailability of vitamins, minerals, and phytonutrients compared to isolated supplements. Seasonal produce naturally aligns with the body's nutritional needs—spring greens support detoxification, summer fruits provide antioxidants, and root vegetables in fall and winter support immune function and digestion. The chef credits farm-to-table dining with helping reshape how diners perceive functional eating.
