Pittsburgh-based Unifying Spirits is moving its patented popping-boba encapsulation technology into functional nutrition, appointing David Li, PhD, as Director of Research and Development to engineer pearls that deliver protein, dietary fiber, probiotics, and caffeine alongside — or entirely outside — the cocktail category.
Li holds a PhD in Biological and Biomedical Sciences from Washington University School of Medicine and dual bachelor's degrees in Mathematical Economics and Biochemistry from Wake Forest University. Before joining Unifying Spirits, he spent four years advising life sciences clients at The Biotechnology and Life Sciences Advising (BALSA) Group, where he rose to Director of Marketing, and previously served as an associate with Oracle's Life Sciences Solutions group — a background that bridges formulation science with commercial strategy.
The Technology Thesis
The pivot rests on Unifying Spirits' core IP: a patented fill process that keeps popping pearls shelf-stable inside finished beverages. Originally engineered to carry spirits, the same encapsulation architecture is now being stress-tested for functional payloads. Protein-filled pearls must hold structural integrity under processing conditions; caffeinated pearls need to maintain controlled-release profiles; fiber- and probiotic-enriched variants introduce additional pH and CFU viability challenges. Experimentation on all three formats began this quarter, Li confirmed, and he is already developing new multi-flavor pearl technology that keeps distinctly flavored pearls separate within a single finished drink.
"Boba POPS® proved that a popping pearl can carry so much more than flavor," said Harmon Rozycki, COO of Unifying Spirits. "Protein, caffeine, and fiber are things millions of people reach for every single day. We believe our pearls belong right there with them."
Market Sizing the Opportunity
The three pipeline categories are among the highest-growth segments in food and beverage right now. The high-protein RTD segment is projected to expand at roughly 10% annually through 2033, driven by fitness- and wellness-oriented consumers seeking convenient protein delivery formats. The caffeinated beverage market is estimated at $92 billion in 2026, a scale that offers runway even for a nascent ingredient-forward entrant. And gut health — the probiotic and prebiotic fiber space — is seeing both consumer pull and substantial acquisition activity; PepsiCo's $1.95 billion purchase of Poppi in 2025 underscored the strategic value operators place on the gut-health and functional-beverage category.
Boba POPS® currently ships to more than 6,000 retail doors across 45 states, with placement at ABC Fine Wine & Spirits, Kroger, and Albertsons, and has extended into a Pop & Go™ RTD cocktail line. That existing distribution infrastructure gives Unifying Spirits a commercial pathway for functional SKUs if bench development clears formulation and regulatory hurdles — including any applicable structure-function claim substantiation and GRAS or NDI review depending on final ingredient selection.
For operators and co-manufacturing partners watching the encapsulation space, the Unifying Spirits model is worth tracking: a finished-formulation patent developed for a regulated beverage category is being repurposed as a delivery-system platform, with a scientist whose CV spans biochemistry and market-sizing strategy now running R&D. If the functional pearl formats reach market, they would represent one of the more novel bioavailability stories in the better-for-you beverage segment.
